Kitchen Inspections

The following are among the food service establishments inspected from March 28-April 10 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. All wooden supports for grill and bar need to be sealed/painted. Bag in a box leaking all over storage shelf.

No paper towels at hand sink in kitchen at start of inspection. Chicken in too deep a container and lid on too tight to allow for very rapid cooling. Cook talking on phone then going back to work handling food wearing same gloves he had been wearing. Shelving lined with foil is not considered a durable, cleanable surface. Shelving dusty over chip/dip/condiment station on cook line. Floor needs better cleaning along wall with dishwasher, three-compartment sink and hot water heater.

Door seal to three-door, reach-in cooler damaged and temperature struggling to maintain 41 degrees or below. Test strips missing that check levels of sanitizer. Coved baseboard needs replacing in kitchen and dry storage. Clean floor around hot water heater.

Cloths used to wipe food contact surfaces not being stored in sanitizer. Ceiling in walk-in cooler is pulling away from seams causing ceiling to sag and show insulation. Floors need a detailed cleaning, especially at three-compartment sink and at floor and wall junctures. Heavy dust accumulation inside hood unit over pizza oven.

Coved baseboard has come unglued from wall behind cook line and freezer and wood baseboards in restrooms need to be sealed at floor/wall juncture.
