Salad container had food debris; stored containers and slicer/utensils had dried food debris. Coke nozzles had some mold/mildew. Repeat violation: Gaskets in make-line coolers and upright freezer damaged, resulting in poor door closure. Repeat violation: Dumpster door open. Ceiling near fry station is peeling paint, rusted and has mold/mildew. Grill station hood lights not shielded. Hood system has dripping grease.

Utensils (knife and strainer) and knife holder dirty; ice scoop hanging on cabinet door; Coke nozzles had mold/mildew; cardboard used beneath grill utensils and saturated with grease. Chicken wings cooked above fryer and at temperatures less than 135 degrees F.

Salads and food in coolers not covered. Ice machine had mold/mildew. Lemon slicer, pans with wax paper and several utensils had food debris/grease. Inspection report not posted within 15 feet and visible from main entrance to allow patrons to readily view report. Make-line cooler in bar leaking and has build up of mold/mildew. Handsinks and area near dishwasher needs resealing above counter and wall juncture. Warewashing temperature gauge not working. Floors throughout kitchen and in dry storage need thorough cleaning and in bar area due to water/food debris build up.

Chef came back into kitchen after a phone call and immediately put on gloves to cut fruit without washing hands first. Drinks throughout kitchen without lids or glasses being used. Cooked chicken piled on sheet pans on rolling rack to cool at room temperature. No thermometer available in kitchen to monitor hot- and cold-held foods, cooked food temperatures, and reheating food temperatures. Cloths used to wipe food contact surfaces — cutting boards and prep tables — not stored in sanitizer between uses. Sides of equipment and water heater at end of cook line with food and grease build up. Shelving in walk-in with heavy build up of dried food. Drawers below prep table with heavy debris (dried food spills). Inside of microwave with dried food. Floors need a good cleaning under and behind water heater, dry storage shelving and freezer. Pans being washed and rinsed at three-compartment sink and reused. Stored knives stored with food debris on them on knife rack.
