Dishwasher not in service, observed kitchenware and utensils being washed and rinsed and put up to air dry without being sanitized. Ice machine baffle with buildup of mold all around edge. Mexican rice (prepared today) doubled panned in steam unit was not holding at required hot holding temperature of 135 degrees or above. No thermometer available that can be inserted into food to monitor internal food temperatures, only an infrared thermometer is in use. Many soiled wiping cloths out on preparation surfaces and being used to wipe prep surfaces being used without the cloths being stored in sanitizer solution between uses. Single-use gloves being wiped off between handling ready-to-eat foods on soiled cloths on prep surfaces by personnel working cook line.
