Cooking with Crevolyn: Feed dad best dish you cook

Father’s Day is Sunday. So I thought it might be a good time to reflect on just how important it is to honor these men in our lives.

I was blessed beyond measure with a wonderful daddy, and then later in life, a wonderful father-in-law. Both had an incredibly positive impact on my life.

My daddy taught me about the value of hard work, having a foundation of faith, loving your spouse unconditionally and taking time out of your everyday routine for fun.

My dad grew up in a family of men who worked in the coal mines, losing his own father in a mining accident. He then served in World War II and returned to work as a trained mechanic.

Daddy worked on cars and trucks until his arthritis wouldn’t allow it anymore. I watched him many times take apart an engine piece by piece and put it back together, all before there were computers and YouTube.

Along with all of that hard work, he always made sure we made time for fun, teaching me all work and no play were a lethal combination. This might explain my tendency to create a celebration out of the smallest things. Every year, we took the coolest vacations but enjoyed the little things like riding to the lake after supper just to feed the ducks.

Daddy valued his family. And even though he worked long hour, he always made time for me and my mom. As a little girl and now as an adult, I see what an amazing and gifted man he truly was.

In honor of all the hardworking daddies out there, we know there is nothing you like better than some good food. I love to cook for men because they love to eat. They appreciate a good meal and are sure to brag about it.

Let’s see, what might make a Father’s Day meal special? Why not have all the ladies in his life make their signature dish and bring them together for one great meal?

By the way, I’m a firm believer everyone should have a signature dish. This cuts down on the guesswork for potlucks and family get-togethers. Even the youngest cooks can put together their own recipe.

I’d say a great menu for Father’s Day would include these slow cooker barbecue ribs, Parmesan roasted corn on the cob, the best baked beans and strawberry banana pie. These recipes can be found on my blog, cookingwithcrevolyn.com.

So let’s set aside this Father’s Day to honor the men who work hard and sacrifice much for their families. And let’s take time to remember those who might not be at the table with us anymore but have left an imprint on our hearts forever. These men are truly my heroes.

Slow cooker barbecue ribs

* 4 pounds pork baby back ribs

* Salt and pepper to taste

* 2 cups ketchup

* 1 cup chili sauce

* 1/2 cup packed brown sugar

* 4 tablespoons vinegar

* 2 tablespoon dried oregano

* Dash of hot sauce

Preheat oven to 400 degrees.

Season ribs with salt and pepper and place in a shallow baking pan. Brown the meat in the oven for 15 minutes. Turn ribs over and brown another 15 minutes. Drain off fat.

Mix ketchup, chili sauce, brown sugar, vinegar, oregano and hot sauce.

Place ribs in slow cooker and pour sauce over ribs, making sure ribs are covered in sauce.

Cover and cook on low for 4 to 6 hours.

For smoky flavor and crunchy goodness, put the cooked ribs on a hot grill for 5-7 minutes on each side.
